What a Relief!



Last night, just when my eyes were starting to glaze over and I was going to fall asleep at my computer, my friend Wendy & I finished the last of the yearbook pages -- 58 in all that had to be submitted yesterday. But the yearbook is now DONE and I'm so glad.

I've had more time and energy today to devote to my children. I got out watercolors during their playgroup this morning, then the twins helped me make new playdough (the last batch I made is getting dry & crumbly). Then I found a post on my twins website asking about homemade donut recipes, and I just had to make my favorite recipe. Allison & Sarah were a ton of "help," and Michael dipped each donut in sugar when we finished. I didn't realize doubling the recipe would give us about 35 donuts, but that was fine with the kids, because we had enough to share with some of our neighbors (Sorry, Kacy, you weren't home!).







Halloween Cider Doughnuts


2 eggs
1 egg yolk
1 cup fresh apple cider
1/2 c. brown sugar
1/2 cup granulated sugar
4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 t. nutmeg
2 T. melted butter

Beat the eggs and the egg yolk together, then gradually add cider and both sugars. Mix flour and other dry ingredients together, then stir into egg mixture along with melted butter. Stir only enough to mix. Roll dough out on a floured work surface. When dough is 1/2 inch thick, cut out donut shapes and let them rest 5 minutes.

Heat oil. When it reaches 365 degrees, drop 3 to 4 doughnuts in it. As soon as they float to the top and are holding their shape, turn them. Fry until golden on both sides, 2 to 3 minutes. Remove as soon as they are done and drain on paper towels.

These are SO yummy just as they are, but I also like to dip both sides in sugar while they're still warm.

Those doughnuts look so yummy! Thanks for keeping a blog... you're so inspiring that if you can do it, I certainly can handle things with just my 3!!! Looks like you guys are having fun! Maybe we'll make some today too!
